Mushroom Walnut Burger

This recipe is a meat burger alternative. It looks like meat and it tastes like meat and even its texture is very similar to that of a beef burger.
Note: This is 100% vegan recipe - we are using chia seeds to make an “egg” to bind the burger mixture but you can use an actual egg instead.
INGREDIENTS 1/2 lb [ 250g ] mushrooms 1 cup walnuts 1/2 cup rice flour 1/2 onion 1 clove garlic 1 tbsp chia seeds 3 tbsps water 1 tbsp parsley (optional) 1 tbsp balsamic vinegar 1 teaspoon salt 1/4 tsp black pepper 2 tsps olive oil for fryingMakes 6 burgers 220 Calories per burger Total Fat 14.8g Total Carbohydrate 17g Dietary Fiber 4g Protein 7.9g Vitamin D 136mcg Calcium 49mg Iron 2mg Potassium 280mg
In a small bowl combine the chia seeds and water together to make a “chia egg”. Set it aside. In roughly 15 minutes the mixture will become egg-like and gooey.
Dice the onions and slice the mushrooms. Optionaly, toast the walnuts. Set everything aside.
In a medium size pan saute the onions and the garlic in a teaspoon of olive oil over a medium heat for roughly 3 minutes until golden. Stir occasionally.
Add mushrooms and continue stirring for another 5 minutes until the mushrooms soften and shrink in size.
Take the pan off the heat. Add balsamic vinegar, parsley, walnuts and soaked chia seeds. Season with salt and pepper and blend the ingredients with a hand blender until nearly smooth.
Add rice flour and combine. You will end up with a dough-like mixture.
Use your hands to shape 6 small burgers and place them on an oiled frying pan. Fry for 4 minutes on each side and serve hot.
